Our winter markets are a perfect opportunity to get to know our wonderful meat vendors. We slow-braised these grassfed beef short ribs and they were amazing! Packed with rich flavors, perfect for a cozy winter dinner with minimal effort.

Braised Beef Short Ribs Recipe

Ingredients:

- 4 beef short ribs, bone-in
- 2 tbsp olive oil
- 2 large carrots, sliced
- 1 large onion, sliced
- 4 garlic cloves, peeled
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 tbsp flour
- 1 tsp fresh thyme (or 1/2 tsp dried)
- Salt and pepper to taste
- Fresh parsley for garnish, optional

1. Preheat the oven to 325°F. Season the short ribs with salt and pepper, then heat olive oil in an oven-safe pot over medium-high heat. Sear the ribs until brown on all sides, about 8-10 minutes, then remove and set aside.

2. In the same pot, sauté onions, carrots, and garlic until softened, about 5 minutes. Stir in tomato paste and flour, cooking for 2-3 minutes to remove the raw flour taste.

3. Deglaze the pot with red wine (if using), scraping up browned bits from the bottom. Pour in beef broth and thyme, bringing the mixture to a simmer. Return short ribs to the pot, submerging them partially in the liquid.

4. Cover and transfer the pot to the oven. Braise for 2 1/2 to 3 hours until the meat is tender and falling off the bone. Garnish with fresh parsley before serving.
